Fluffy Scrambled Eggs

Whisk 2-3 eggs with 2 tbsp. milk, a pinch of salt & 1 tsp. turmeric. Heat a small nonstick skillet with a slab of butter over medium-low heat. Once the butter is just melted, add in the eggs. Using a rubber spatula, gently fold the eggs over themselves once they firm, moving the pan around so the uncooked eggs fall onto the skillet. Keep folding until you get a fluffy scramble, about 3-4 minutes & voilà!
