Grilled Cottage Cheese Fixation Lunch

Combine 1/2 cup whole milk cottage cheese with 1/4 cup shredded mozzarella. Top two slices of sourdough with 2 tbsp. pesto. Layer on the cottage cheese mixture, then top with 1 tbsp. sun-dried tomatoes in oil. Add black pepper, salt, and any desired spices or toppings here. Melt 1/2 tbsp. butter over medium-high heat in a skillet. Add the assembled grilled cheese and pan sear until each side is golden brown, adding another 1/2 tbsp. butter when you flip halfway.
