Hot Honey Bacon & Apple Grilled Cheese
20 mins prepServes 1
A cozy grilled cheese made with crispy, smoky, and sweet Smithfield x Mike’s Hot Honey Bacon, apple, caramelized shallots, white cheddar cheese, and a drizzle of Mike's Hot Honey, all on sourdough bread.
1. Preheat a medium-sized skillet over medium-high heat. Add bacon slices and cook until golden brown, flipping to repeat on the other side. Remove from pan and place on a paper towel lined plate.
2. Reduce heat to medium-low, leaving about 1 tbsp. worth of bacon fat in the pan. Add sliced shallot and salt, cooking until shallots get soft, jammy, and caramelized, about 10 minutes. Add balsamic vinegar and cook for another 3-4 minutes, then set aside.
3. Mix together the softened butter and thyme sprigs until well-combined. Spread thyme butter on one side of each slice of sourdough. Flip slices over and layer cheese evenly on both slices. To one slice, layer caramelized onions, apple slices, bacon, and a drizzle of Mike’s Hot Honey, then carefully combine both slices together.
4. Cook grilled cheese on a medium-sized skillet over medium-low heat, covering skillet to help the cheese melt, until each side is golden brown. Drizzle extra Mike’s Hot Honey and fresh thyme, and cut in half.
