Jammy Smashed Egg Toast

For the perfect soft-boiled jammy eggs:

1. Take eggs out of the fridge to come to room temperature for about 20 minutes (this prevents cracking!).
2. Bring a pot of water with 4 tbsp salt to boil (the salt helps the eggs peel).
3. Once water has rolling bubbles, using a spoon, carefully drop in eggs one at a time. Immediately set a timer for 6:30 minutes.
4. While eggs are boiling, prepare an ice bath (a bowl of cold water with lots of ice).
5. Once the timer goes off, immediately remove eggs from heat, drain water, and run eggs under cold water for a minute. Then put eggs in the ice bath (this stops the cooking).

To assemble the toast: Smash avocado on seeded bread. Top with the prepared jammy eggs. Sprinkle with sumac everything bagel seasoning and drizzle with olive oil.
