Tiramisu French Toast Casserole

Directions:

1. Make the French Toast: Grease a casserole dish generously with butter and add cubed bread in an even layer. Using a food processor or blender, blend together the cottage cheese and eggs until smooth and pale yellow, about 3 minutes. Pour egg mixture into a mixing bowl, then add remaining French toast ingredients and whisk until well combined. Pour mixture over bread, and allow bread to sit for 30 minutes to soak. Preheat oven to 350°F while waiting. 
2. Make the sweet cream topping: in a blender or food processor, blend together the cottage cheese and sugar until smooth, about 5 minutes. Pour cream into a bowl and chill in the fridge until ready to serve. 
3. When ready to bake, place toast in oven and bake for 30-35 minutes, or until the top is golden brown and slightly crispy. Allow toast to cool for 15 minutes before topping. 
4. Before serving, top French toast with sweet cream and a dusting of cocoa powder. Enjoy!
